Connecticut: Chicken Parmigiana

I spent more than half my life in Connecticut and have indulged in my fair share of chicken parms. Hot sandwiches with perfectly toasted bread have a special place in my stomach.
My best friend from high school, Cameron, was going to be in town and she made a special request for the Connecticut sandwich. Couldn’t think of a better person to be the official eater! I will admit our favorite sandwich was The Bruin [chicken cutlet, mozzarella, bacon, and the most delicious bbq sauce], but chicken parms are high on the list.
We got together with Cam’s college friends and after the chicken took its sweet time cooking we were all starving. Didn’t take us long to eat every last bite and then wash it down with unnaturally green shamrock shakes. All in all, a great Saturday afternoon.
